 I consider myself a commonsewer of lobster and would say that I could
tell the difference mostly by way of consistancy and texture. The person
who indulges in lobster only occasionally might not however be able to
do so. Regardless the way it is served it is a delicious dish and worth
the money spent. Crayfish are a major industry in Louisiana. I recently
did a web search for crawfish and most of the hits I got were louisiana
related - resturants, farming, distributing, etc.
